This exceptional all-natural antibiotic-free bacon begins with certified humane raised & handled pigs from family-owned farms throughout the Northeast. It is similarly brined and smoked, but uncured and completely free of nitrates or nitrites. Each of our delicious Jansal Valley bacons begins with exceptionally lean, hand selected pork belly raised in the Northeast. Using old fashioned traditional artisan techniques, the bellies are again hand inspected for quality and size then brined with locally sourced maple syrup for several days. They are then placed in a European-style smoker and slowly smoked over smoldering locally sourced wood chips two separate times. The process takes up to one full week to develop a completely natural bold, smoky flavor without artificial additives and the perfect texture that holds its size and shape through the cooking process.
