Heat a sauté pan over medium-high heat and lightly toast the nuts, stirring often to prevent burning. Once the nuts have toasted for 4-5 minutes, transfer them to a heat-safe blender or food processor and add the remaining ingredients. Blend the romesco sauce until it is mostly smooth, about 2 minutes. Season to taste with salt and pepper, and transfer to a serving dish.

Serve alongside roasted meats, vegetables, or crudité. Spread it onto a sandwich, or use it as an easy vegan accompaniment to pasta.
