Grate cheese into thin strips.

Cook bacon until crispy; set aside to cool. Once the bacon has cooled enough to handle, roughly chop and reserve to the side.

In a medium sized pasta pot, melt butter over medium-high heat. Add the diced onion and cook until tender and translucent. Add the flour and stir until the onions are well coated.

Reduce the temperature to medium-low and add the milk slowly. Stir frequently until the milk mixture comes up to a gentle simmer.

Add the grated cheese to the pot, whisking until you have a smooth sauce. Once the sauce has begun to simmer, add ¾ of the chopped bacon and the pasta, stirring until everything has combined.

Place the pasta mixture into a serving bowl, and top with the remaining bacon, sour cream, and chopped scallions. Enjoy!
