This recipe uses pureed Northern White beans to provide a creamy consistency in this vegan sauce.
Great Northern Beans

In a large pot of salted water, boil the soaked beans until tender, about one hour. Drain, and set aside.

In a sauce pan, gently heat the onion, garlic, and lemon zest over medium-low heat. Cook the onions, stirring occasionally, until they are very tender, about 15 minutes. Add the cooked beans, stock, nutritional yeast, and seasoning. Bring to a boil, then reduce to a simmer. Simmer for 5-10 minutes, then remove the sauce from the heat. Puree the sauce in a blender or food processor until very smooth, about 2 minutes.

Serve the sauce over your favorite pasta and sautéed greens, or use it as a spread on sandwiches, drizzled over pizza, or as a warm dip for crudité.
